Karedok

Karedok (Jawa Barat)



Bahan :
Bumbu Saus:

250 gram kacang tanah, goreng, haluskan
6 buah cabai rawit merah rebus
6 buah cabai merah besar rebus
5 cm kencur
3 siung bawang putih
1 sdm gula merah sisir
1 sdt garam
1 jeruk limau, peras airnya
1 sdm cuka masak
150 ml air matang
150 gram oncom, bakar

Sayuran:

5 lonjor kacang panjang, iris halus
2 lembar kol, iris halus
3 terong lalap,potong dadu kecil
1 buah ketimun, iris
50 gram taoge, siangi, rebus sebentar
50 kemangi

Pelengkap:

Kerupuk merah/sagu

Cara membuat :

Bumbu/saus:
haluskan kacang tanah bersama cabai merah besar, cabai rawit, bawang putih, gula merah, dan garam, aduk rata.

Tambahkan air, oncom remas, masukan kedalam bumbu, beri air jeruk limau, aduk rata.

Penyajian:
cuci bersih sayuran, iris lalu masukan ke dalam bumbu, aduk rata, tambahkan kemangi, sajikan.

  • Total Time: 1hour 10 minutes
Tempe penyet is my husband's favorite Sundanese food. It is best eaten with Kangkung Belacan Stir Fry and hot fluffy steamed rice. We usually eat it straight from the stone-mortar. So basically, tempe penyet is fried tempeh which are being crushed with "sambal terasi / belacan chilli" using pestle & mortar. Very easy and quick to make, the taste is very delicious too.

Here is tempe penyet recipe:

Ingredients

  • 1 block of tempeh (slice thinly)
  • 1tsp corriander powder
  • 1tsp salt
  • 3 shallots
  • 5 long chilli
  • 1tsp belacan (roasted)
  • 2 candlenuts
  • palm sugar (according to taste)
  • 1 cup of water

Instructions

1. Marinate tempeh with water, corriander powder & salt for 1 hour.
2. While we are waiting for the tempeh, we can make belacan chilli. It is very easy, using pestle & mortar, crush together the chilli, belacan, candlenuts, shallots, palm sugar & a bit of salt to taste. Leave the belacan chilli on the mortar.
3. Now, you can fried the tempeh. Drain the water from the tempeh first with kitchen paper before you put it into hot oil.
4. Crush the fried tempeh with the belacan chilli. Add a little bit of oil from frying the tempeh.
5. Done.

Ingredients

  • 3 - 5 bay leaves
  • 1cm galangal (crushed)
  • 4 garlic (crushed)
  • 3tbp palm sugar
  • 1 block of tempeh
  • 3 cups of coconut water or water
  • salt & sugar (to taste)
  • 1 cm tamarind (disolve in 3 tbp of water)

Instructions

1. Boil coconut water / water.
2. When the coconut water / water is boiling, add the tempeh and reduce the heat to medium heat.
3. Add bay leaves, galangal, garlic, palm sugar, tamarind liquid. Add salt & sugar to taste.
4. Boil for about 1 hour or until the liquid is gone. Stir every 15 minutes.
5. The tempe bacem can be eaten as it is or you can fried them and serve them with belacan chilli.

Sayur AsemBAHAN:

- Air kaldu sapi (air bekas ngerebus daging gepuk - atau air kaldu sapi biasa)
- Jagung yg dibelah menjadi 2 atau 3
- Labu siam, potong kotak2
- Buncis atau kacang panjang
- Kacang tanah segenggam
- Melinjo (saya tidak pakai karena tidak menemukan melinjo)
- 2 lembar daun salam
- 1sdt lengkuas bubuk
- air asam jawa secukupnya.

BUMBU HALUS:

- 5 siung bawang merah
- 2 buah bawang putih
- 3 cabe keriting (bisa ditambahkan jika anda menyukai sayur asem yang pedas)
- 2sdt terasi
- 6sdt gula pasir (bisa dikurangi kl ga terlalu suka manis)

CARA MEMBUAT:

1. Rebus sayuran yg keras dulu (contohnya kacang tanah & jagung).

2. Setelah empuk, masukkan bumbu halus, daun salam, lengkuas bubuk dan air asam jawa.

3. Masukkkan labu siam & buncis.

4. Masak sampai semua sayuran empuk, hidangkan panas2 dgn gepuk, tahu goreng & sambel terasi.

English Version - Sour Tamarind Vegetables Soup Recipe:

Ingredients:

- Beef broth (I usually use the broth from the broth of Gepuk) or you can use normal beef broth, it's up to you.
- Corn
- Chokes, cut 2x2cm
- A handful of green beans or snake beans
- A handful of raw peanuts
- Melinjo (I'm sorry, I don't know what's melinjo in English and I never found any melinjo in Australia)
- 2 bay leaves
- 1tsp galangale powder
- 1-2tsp tamarind paste (according to your taste)
- 6tsp sugar (according to your liking)
- salt

Spices (grind them together in food processor / pestle & mortar):

- 5 shallots
- 2 garlic
- 3 big / long chili (optional)
- 2tsp shrimp paste (tips: grill shrimp paste for around 1 minute to make it more fragrance)

Directions:

1. Boil hard vegetables / ingredients first (ie. corn & peanuts) with the beef broth

2. When they're tender, add spices, bay leaves, galangale powder, tamarind paste, salt & sugar.

3. Add chokes and beans.

4. Boil until all vegetables are tender, adjust the taste and serve.
